Healthy Marbled Banana Oat Muffins

Ingredients

  • 2 c oat flour
  • 1/3 c ground flax
  • 1/4 c cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 c mashed banana (about 3 bananas)
  • 1/4 c maple syrup
  • 1/4 c brown sugar
  • 1/2 c milk
  • 1/3 c oil (I used avocado)
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/3 c mini chocolate chips (optional)

Instructions

Preheat oven to 400. Line or grease a 12-cup muffin pan. Mash bananas, and add oil, sugar, maple syrup, milk, vanilla and eggs—mix thoroughly. Next, add salt, baking soda, baking powder, ground flax, rolled oats, and chocolate chips, and stir until combined.

Pour half the batter into a separate bowl. In one bowl, add 1 c oat flour and combine. In the other bowl add 3/4 c oat flour and 1/4 c cocoa powder.

Layer the batters into the muffin pan. You can use a toothpick to swirl the batters for a more marbled effect. Top with extra chocolate chips if desired. (I always desire extra chocolate chips!)

You could make various substitutions for this recipe—and you can even omit the cocoa powder and replace with flour for regular banana oat muffins! Let me know how you make this recipe yours in the comments below!
