Green Eggs & Ham Texas Style ~ Breakfast Tacos #Recipe #TXBacon #CBIAS

My husband and daughter both love breakfast… especially breakfast tacos! So I thought it would be fun to do something a little different for St. Patrick’s Day and make Green Eggs & Ham Breakfast Tacos! So the little Monkey and I set out to Walmart with a list to get what we need! I have my own little ham in Alexandra!

 The first time we went shopping they were out of the Petit Jean Ham! So we went to the “Hidden” Walmart, which is the prettiest Walmart I have ever been to!! We searched high and low for the Petit Jean Ham… and found it! Woohoo for #TXBacon!!
My little monkey was tired of me taking her picture…

We were headed to Grandma & Pappy’s for the weekend so we packed up all of our ingredients to make a Dr. Seuss inspired St. Patrick’s day breakfast for everyone!!

Green Eggs & Ham Breakfast Taco Recipe:

Eggs (2 per person)
1pkg Petit Jean Ham
1 pkg of Flour Tortillas
Green Food Coloring
Shredded Cheese
Salsa of your choice
Guacamole (optional)
Seasoning(s) of choice ~ to taste

Green Eggs
Crack eggs in a mixing bowl add seasoning to taste! I use Tony Chachere’s Cajun Seasoning and Garlic Salt. Add drops of green food coloring. I used about 20 to 25 drops because I wanted the eggs to be really green. You can use as little or as much as you want. Whisk eggs until thoroughly mixed. Pour into a skillet and cook on medium low until cooked and fluffy!

Now those are some green eggs!!

Petit Jean Ham (Official Ham of the Dallas Cowboys)

Open the package of ham and rinse. Place on a cutting board and slice it in strips or dice it (your preference). Place in skillet and heat thoroughly.

Breakfast Tacos
Heat the tortillas ~ You can wrap a stack in a SLIGHTLY damp paper towel and put them in the microwave for 10 second intervals.
Take the tortilla and layer in the ingredients as  you want and top with your favorite topping then enjoy!!

** I am the type to “mix” everything without measuring exactly and see how things turn out : )
** You can “stretch” your eggs by adding a dash or two of milk.
** You can add any toppings ie: green chiles, jalapenos, green verde salsa, etc. 

My little Monkey enjoyed her green eggs & Ham!
